So there is this recipe I'm urging whomever reads this to try.. they are called "Ecuadorian Potato-Cheese Patties"
They are so delicious. And if you are on weight watchers, they are only 4 points.
Here's what you need..
1 pound Yukon Gold Potatoes
2 Scallions, very thinly sliced
1/2 cup shredded reduced fat Pepper Jack cheese
1/2 cup fresh corn kernals (from one ear, but I just use canned)
1/4 cup chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons olive oil
1. Bring a medium saucepan with cold water and the peeled potatoes to a boil. Simmer until the potatoes are tender. Drain then transfer them to a large bowl. Let it cool for about 10 min.
2. Coarsely mash the potatoes with a potato masher. Stir in remaining ingredients, except oil. Form into 4 patties. Refrigerate for up to 2 hours.
3. Heat oil in a large nonstick skillet over medium heat. add patties and cook for about 4 minutes on each side. Make sure to gently turn them and cook until they are heated all the way through.
Trust me, this is one of the greatest things I have ever tried and it realy helps when Im trying to forget about meat lol
According to the weight watchers recipe book (where I found this) For each patty you consume around 165 calories. 4g fat, 1g sat fat, 0g trans fat, 6mg chol, 378 mg sod, 27g total carbs, 1g total sugar, 2 g fiber, 6g protein, 167mg cal.

So I have come to realize just how clever my seemingly dimwitted 15 year old cat Vixen is.
Its about 9 am and I wake up and go begin my routine. This morning is a little different since my body is trying to play "catch-up" due to my 19 1/2 hour shift at my job. I nonchalantly glance into the kitchen and walk back into my room.
THUD.
I tilt my head, KNOWING what it is and I feel annoyance creep up. I walk into the kitchen to find what I thought I would.. the garbage can was toppled over. Garbage everywhere. Vixen no where to be found.
After taking 3 minutes to lift it and get everything back in it, getting my floor clean again, in saunters Vixen, pretending to be sleepy, dropping onto her side next to my foot. I couldnt help but laugh.
I always call her my dumb lil dinosaur. But today she was a clever lil fox.
Physics
So as my Boss drove me home in this hell of a snowflakes ass, snow from the top of his car fell to cover the windshield. We both were startled. But my boss sped up instead of slowed down.. N then hit his brakes so that all the snow from the roof can come crashing to his hood.
“inertia” is what he sez to me as he turns on his wipers n brushes the last of the snow off.

So I'm here at work, wondering why I havent kept up with my blogger account. I really have no real reason to NOT post... I am not so busy doing other things. I guess I just feel that I will continuously rant.
And who likes to read about my lil ol' complaints?
Have you ever wondered about shit like that? Like.. who cares? You can come here every day and post something that may mean nothing.. or may mean everything to you.. but who pays attention? Who REALLY cares? Has someone made a connection to your post? Did you remind someone of something from their past? Did someone rethink a decision based on something you have written?
I guess I will continue asking myself these questions everytime I decide to write. Maybe one day if someone feels a certain way, they will comment and let me know how it affected them.

Kick it up a notch.
So here I am!! Back with another blog. Wondering what to say. I feel like I needed to start exercising my brain again, so here I am blowing the dust off of my keyboard.
FAIL!
Today I started this DTour thing. Its a diet for diabetics. Excuse me.. not a diet, but a new way of eating and living!
Great.
Not that I don't mind being a fatty. (yeah I said it).
But Its important if I wanna live. Sugars? No no no.. not for me..
This morning I started with a veggie omelet. First I tried to make it with egg substitute since eggs are so full of cholesterol.

It was a gelatinous mess. I was so grossed out by it, I basically made a fritter out of it and gave it to K. He ate it up with pleasure. I didn't have the balls to watch him. I walked out of the room and made my way to the fridge for the real fucking deal. I got the egg whites, spinach, mushrooms, onions and garlic... mixed the eggs whites... da da da da... grated a tad of 50 percent reduced fat extra sharp cheddar cheese. Covered it so the cheese can melt, while buttering my 1 slice of whole grain toast (with trans-free canola margarine of course). I set it all in a small dish and proceeded to pour myself 8oz of Almond milk.
Yum.
Lunch was just plain sad. It was tuna with mayo on a slice of that dense bread. And a half a small tomato. Yup. It was supposed to also have lettuce but I forgot to add it. The cool thing was that I got to use my food scale to measure 3oz of tuna ^.^

It took me about 51 minutes to eat it. I really don't think that bread is the best tasting.
My afternoon snack was a little tart but sooo good. Its non-fat plain yogurt, blueberries and walnuts. It had a cup of yogurt as the serving and I knew I couldnt eat all of it. The tartness threw me off a little so I added a teaspoon of agave nectar which boosted the flavor. Mmmmmm Deliciousness =)
Last but definitely not least.. Dinner. I felt as if I was dining on Ambrosia. It was more than what I expected. Red pepper, Mushrooms, Onions, Yellow Squash, Brown Rice and 3oz of chicken breast seasoned with garlic and herb. The meat was tender and juicy. This is one I will enjoy again and again.
