So there is this recipe I'm urging whomever reads this to try.. they are called "Ecuadorian Potato-Cheese Patties"

They are so delicious. And if you are on weight watchers, they are only 4 points.
Here's what you need..

1 pound Yukon Gold Potatoes
2 Scallions, very thinly sliced
1/2 cup shredded reduced fat Pepper Jack cheese
1/2 cup fresh corn kernals (from one ear, but I just use canned)
1/4 cup chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons olive oil

1. Bring a medium saucepan with cold water and the peeled potatoes to a boil. Simmer until the potatoes are tender. Drain then transfer them to a large bowl. Let it cool for about 10 min.

2. Coarsely mash the potatoes with a potato masher. Stir in remaining ingredients, except oil. Form into 4 patties. Refrigerate for up to 2 hours.

3. Heat oil in a large nonstick skillet over medium heat. add patties and cook for about 4 minutes on each side. Make sure to gently turn them and cook until they are heated all the way through.

Trust me, this is one of the greatest things I have ever tried and it realy helps when Im trying to forget about meat lol

According to the weight watchers recipe book (where I found this) For each patty you consume around 165 calories. 4g fat, 1g sat fat, 0g trans fat, 6mg chol, 378 mg sod, 27g total carbs, 1g total sugar, 2 g fiber, 6g protein, 167mg cal.
